This watermelon and goats cheese salad combines the bursts for fresh flavours with creamy textures in one delicious mouthful. Ideal for an afternoon outdoors in the sunshine with mates.

What you’ll need

1/4 watermelon, seedless

1/2 rock melon

2x avocados

2x oranges

2x Lebanese cucumbers, peeled and chopped

Juice of 1 lemon

1x green chilli, seeds removed and thinly sliced

Pinch of caster sugar

150g soft goat’s cheese, crumbled

A generous handful of mint leaves

What to do

With a melon baller, cut balls from the watermelon and rock melon, discarding any seeds. Place in a bowl. Do the same with the avocado, and place in another bowl drizzling on the lemon juice. Toss to coat well.

Slice one orange into segments, removing the skin and pitch. Throw any juice on the board into a small bowl for the dressing. Add the orange pieces and chopped cucumber in with the melon.

Juice the remaining orange and add it to the dressing bowl with the chilli and sugar. Season with salt and pepper, whisking to combine well.

Add the avocado to the melon mix.

When ready to serve, pour half the dressing over the salad, tossing gently to combine. Place the salad on a platter, scatter the goat’s cheese and mint, before drizzling over the remaining dressing.

Super easy, and very refreshing.
