Labor Day Refreshing Watermelon Salad
With summer coming to an end, Labor Day weekend is a great excuse to fire up the BBQ, throw down the picnic blanket or get out of town and enjoy an adventure outdoors.

The hot and dry conditions are likely to continue in California this Labor Day weekend so you’re going to want something refreshing to enjoy. This watermelon salad from Pickled Plum provides all the refreshing notes with a little sweetness. Vibrant in

Labor Day Refreshing watermelon salad
What you’ll need
6 cups watermelon, remove rind and seeds
16 strawberries, hulled
2 cups tomatillos
2 shallots, finely chopped
24 mint leaves, shredded
4 tbsp extra virgin olive oil
3 tbsp balsamic vinegar
1 tsp black pepper, ground
sea salt to taste
What to do
Chop watermelon, strawberries, and tomatillos into bite sized pieces and place in a bowl. Add the shallots, and gently toss.
Drizzle with olive oil and balsamic vinegar. Gently toss and season with black pepper. Top with mint and season with sea salt.
Tip: pre-cut the fruit and vegetables ahead of time, and store covered in the fridge. Simply dress the salad with the shallots, oil and vinegar, and season when you’re ready to serve.
