Labor Day Refreshing Watermelon Salad

Labor Day Refreshing watermelon salad
Serves 8
What you’ll need
6 cups watermelon, remove rind and seeds
16 strawberries, hulled
2 cups tomatillos
2 shallots, finely chopped
24 mint leaves, shredded
4 tbsp extra virgin olive oil
3 tbsp balsamic vinegar
1 tsp black pepper, ground
sea salt to taste
What to do
Chop watermelon, strawberries, and tomatillos into bite sized pieces and place in a bowl. Add the shallots, and gently toss.
Drizzle with olive oil and balsamic vinegar. Gently toss and season with black pepper. Top with mint and season with sea salt.
Serve immediately.
Tip: pre-cut the fruit and vegetables ahead of time, and store covered in the fridge. Simply dress the salad with the shallots, oil and vinegar, and season when you’re ready to serve.
